Project aim:
To date, there has been a lack of reliable data on the significance of organic products in out-of-home catering in Germany. The project aims to address this knowledge gap by developing a method to regularly capture the monetary value of organic food in the out-of-home catering (OHC) sector.
Activities of ECOZEPT:
In collaboration with AMI GmbH, Ecozept is developing a methodology for recording and analysing supply structures in the out-of-home catering sector. Based on literature research and benchmarks, Ecozept is also providing insights into data collection methods, particularly in France. Following the structural analysis, two nationwide panels have been established in Germany: One comprises kitchen operators (catering companies), and the other comprises supply companies (particularly specialised wholesalers). These panels will be used to record the value of goods, as well as market trends and developments in the organic food sector, through surveys.
