Analysis of the market structure and market share of organic products within the out-of-home catering sector in Germany

Project aim:

To date, there has been a lack of reliable data on the significance of organic products in out-of-home catering in Germany. The project aims to address this knowledge gap by developing a method to regularly capture the monetary value of organic food in the out-of-home catering (OHC) sector.

Activities of ECOZEPT:

In collaboration with AMI GmbH, Ecozept is developing a methodology for recording and analysing supply structures in the out-of-home catering sector. Based on literature research and benchmarks, Ecozept is also providing insights into data collection methods, particularly in France. Following the structural analysis, two nationwide panels have been established in Germany: One comprises kitchen operators (catering companies), and the other comprises supply companies (particularly specialised wholesalers). These panels will be used to record the value of goods, as well as market trends and developments in the organic food sector, through surveys.

Updating the regional database on organic farming in Baden-Württemberg

Ecozept has been commissioned by the Ministry of Food, Rural Areas and Consumer Protection (MLR) to comprehensively update the data on regional organic farming and the demand for organic food in Baden-Württemberg on the basis of the Ecozept-FiBL study "EVA - BIOBW 2030", published in 2021. The background to this is the further development of the "Action Plan Organic from Baden-Württemberg", for which the update provides an important data basis.

On the basis of this updated data, the MLR's measures for the expansion of organic farming can be designed to be as targeted and supportive as possible.

Developing an organic market report within the framework of the implementation of the Organic Action Plan of the state of Brandenburg (Germany)

The political objective of the state of Brandenburg is to convert 20 % of its agricultural land to organic farming by 2024. In 2021, the share of organic land is about 15 %. This increase requires substantial efforts as well as incentives for agriculture and its downstream/subsequent sectors/processes. Building on a study by AMI in 2022, the organic market report is intended to provide detailed data along the organic value chains in Brandenburg and Berlin and therefore offer guidance for corporate and political action.
