Project aim:

Munich's ‘Haus der Kost’ (House of Food), the Competence Centre for Sustainable Nutrition which opened in April 2024, has set itself the goal of increasing the proportion of organic food in out-of-home catering in the city of Munich. To this end, organic regional market structures are to be identified and strengthened and/or established and stabilised. In order to fulfil these tasks, a coordination office ‘Bio-Regio-Management für Lebensmittel in der Außer-Haus-Verpflegung’ (Management of regional organic food in the out-of-home catering) was created, which Ecozept and its subcontractors will continue to support for a further two years. Activities of ECOZEPT:

Ecozept manages the coordination office and uses the following methods for implementation: analysis of supply potential, demand surveys and analysis of procurement structures, initiating and consolidating supplier relationships, in particular through events such as ‘Kitchen meets region’ - the contact exchange in speed dating format, preparing and maintaining supplier and product range lists as well as supporting inter-company cooperation and offering training and communication measures for market players. The following organisations are involved in the implementation: Bioland e.V., Naturland Zeichen GmbH, Landesvereinigung ökologischer Landbau (LVÖ) and the project office Ökologisch Essen of the association Bund Naturschutz Kreisgruppe München.

The aim of the project in the Lahn-Dill-Gießen region in the German federal state of Hessen is to measurably increase the proportion of regionally sourced organic food in school canteens. The project focuses on the development of supply relationships and networking between regional producers and processors as well as catering companies and schools.

Promotion of sustainable food in out-of-home catering in the department "Bouches-du Rhône" (South of France)

Since 2020, the Aix-Marseille-Provence metropolitan region and the Arles area have been jointly implementing a regional food project (PAT) in the Bouches-du-Rhône department. PAT's follow a similar approach to the eco-model regions in Germany, but are not limited to organic food. The two local authorities want to support the region and especially the municipalities in their efforts to offer accessible, local, sustainable and high-quality food in out-of-home catering for all population groups.
