Project aim:
Elaboration of a good practice guidance for the consideration of more organic and regional products in the awarding of public catering services in Saxony (Germany). The study also aims to show how regional and organic value chains can be strengthened through increased demand by the part of public catering institutions.
Activities of ECOZEPT:
Ecozept is conducting this study together with FiBL Projekte GmbH and Prof. Dr. Christopher Zeiss. Based on an analysis of Best-practice cases ("benchmark"), possible legal room for manoeuvre in the awarding of catering services will be identified. In a participatory process with three workshops, Saxon actors from the catering sector are consulted in order to derive concrete recommendations for action and measures for more organic and regional products. The recommendations will be summarized in a handout as a guideline for public administration.

The results are presented in a 60-page “Work aid for the awarding of public catering services” and summarized in a “Handout guideline” for public administration. Both documents are available for download here.
